The wine has been aged in 100% French Oak from the Center of France, with a medium toast. We have always appreciated the subtle hints of vanilla picked up in French oak aging. We believe that a Cabernet should not be "over-oaked" but should have a good balance of fruit and oak, bringing out more characteristics of the wine. The wine is also aged in a cave for optimal climate control and barrel aging conditions.
